"633" American Pale Ale

Our first beer has been aptly named “633” after the Regions telephone exchange for starters. It is a mildly hoppy pale ale using a 2 row pale base malt and several other specialty malts for body, color, and head retention. It is hopped with American west coast hops throughout the boil giving it a nice hop bite and mild aroma. This one is a bit stronger than the usual pale ale coincidently weighing in at 6.33 alcohol by volume!

"God Country" Kolsch

Good, dense head retention is desirable. Light pearapple-Riesling wine-like fruitiness may be apparent, but is not necessary for this style. Caramel character should not be evident. The body is light to medium-light. This beer has low hop flavor and aroma with medium bitterness. Wheat can be used in brewing this beer. Ale yeast is used for fermentation, though lager yeast is sometimes used in the bottle or final cold conditioning process. Fruity esters should be minimally perceived, if at all. Chill haze should be absent.

Born of a flood and centuries-old Belgian text, 1554 Enlightened Black Ale uses a lager yeast strain and dark chocolaty malts to redefine what dark beer can be. In 1997, a Fort Collins flood destroyed the original recipe our researcher, Phil Benstein, found in the library. So Phil and brewmaster, Peter Bouckaert, traveled to Belgium to retrieve this unique style lost to the ages. Their first challenge was deciphering antiquated script and outdated units of measurement, but trial and error (and many months of in-house sampling) culminated in 1554, a highly quaffable dark beer with a moderate body and mouthfeel.

FSB’s take on a classic German style beer brewed in honor of the 1600 Group, the community-minded neighbors who united to buy the building that would become Fifth Street Brewpub. They helped make all this possible. It is widely accepted among beer aficionados that the Kölsch was Germany’s answer to the English pale ale. The subtle effervescent fruitiness and mild hop bitterness hovers happily on the palette, and pairs perfectly with fish and light dinners, but just like an IPA or Pilsner, it holds up well with grilled meats and sandwiches. The crisp clean finish makes 1600 Kölsch a naturally great session beer. 1600 Kölsch is incredibly flavorful, and at 5.0% ABV, it’s almost impossible to drink just one.

2015 GABF Gold Medal Winning! Our 1623 Brown Ale is the very first recipe Nate and Josh made for the 7th. The year 1623 is when the 7th settlement was actually settled. Charter Oak's 1687 Brown Ale (this was the year the legend of the Charter Oak took place, and Wadsworth hid the document in the majestic Oak Tree - later to become know as The Charter Oak) is an American style which is slightly more robust than the traditional English Brown Ale. This beer is brewed to a dark copper shade and and well balanced malt and hop with distinctive toasted flavors from both our premium specialty roasted and chocolate malted barley, also allowing for a faint undertone of caramel. This style is lightly hopped for balance and this ale will prove to be a wonderful selection for a sessionable beer. Our medium-bodied, limited bitterness and hop aroma will make this an excellent choice. Look for our 1687 Brown Ale at your favorite watering hole in June.

18 Mile Rye Pale Ale

We wanted to make rye based beer that highlighted the rye malts unique spicy taste but without the overpowering earthy tones that can come along. We found mashing the base malt at a higher temperature created the perfect balance. 1811 Lager

Two centuries ago, on the site of what is now the Fort George Brewery block, fur magnate John Jacob Astor’s expedition boldly built a trading post they called Astoria—the first US settlement west of the Rocky Mountains. Today, we’re proud to craft the Official Bicentennial Beer of Astoria. Many West Coast brewers in the 19th century had no ice, so they improvised an effervescent beer by brewing lager yeasts at higher-than-normal temperatures. Described as a “refreshing drink, much consumed by the laboring classes,” it’s the inspiration for 1811 lager. More flavorful than most modern lagers, and fermented at warmer temperatures, 1811 is lovingly concocted from 2 row malted barley and cracked maize; corn was a popular beer ingredient in pre-Prohibition days. 1811’s hop character gives it a distinctive Northwest style worthy of Astoria’s 200-year history.
